
Skate wing with caper juice and tomatoes. Serve this dish with a fresh salad and fried potatoes. Ideal for a weeknight. Enjoy your meal!
Ingredients

2 skate wing fillets of 150 g

juice of ½ lemon

50 g flour

30 g butter

250 g cherry tomatoes, halved

1 tbsp olive oil

2 tbsp capers

150 ml dry white wine
Preparation
- Rub the skate wing fillets with salt, freshly ground pepper and a little lemon juice. Leave the pieces of fish for 5 minutes. Preheat the oven grill.
- Sprinkle the flour on a plate and roll the fish pieces in it. Heat the butter in a large frying pan and fry the skate wing fillets for 6-8 minutes until golden brown and cooked through.
- In a baking pan, toss the tomatoes with freshly ground pepper and olive oil. Roast the tomatoes in the oven for 4-6 minutes until done.
- Place the skate wing fillets on warm plates. Stir the capers with a dash of water and the wine through the frying fat and let it reduce until bubbly. Spoon the gravy over the fish and spoon the tomatoes next to it.
